Simmered Cherry Almond Anti-Inflammatory Porridge

Rolled oats simmered with turmeric, cinnamon, and cherries, finished with almond butter for a make-ahead breakfast.

Ingredients
  

Porridge
  • 1 cup rolled oats (90 g); old-fashioned, not instant
  • 2 cups unsweetened almond milk (480 ml)
  • 1 tbsp chia seeds (10 g)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground turmeric
  • 1 black pepper small pinch; helps absorb the turmeric
  • 1 salt small pinch
  • 1 cup cherries, pitted and halved (150 g); fresh or frozen, plus extra for topping
  • 1 tbsp almond butter (16 g)
  • 1/2 tsp vanilla extract
  • 1 maple syrup to 2 tbsp (20 to 40 g); optional, to taste
Toppings
  • 2 tbsp sliced almonds (14 g); toasted if you like

Method
 

Porridge
  1. Combine the oats, almond milk, chia seeds, cinnamon, turmeric, black pepper, and salt in a 2-quart / 1.9L saucepan over medium heat.
  2. Bring to a gentle simmer, stirring often so the oats don't stick to the bottom of the pan.
  3. Reduce heat to low and simmer for 8 to 10 minutes, stirring every minute or so, until the oats turn creamy and thick.
  4. Add the cherries and simmer for 3 to 5 more minutes, until they soften and release their juice into the porridge.
  5. Remove from heat and stir in the almond butter and vanilla extract until fully melted through.
  6. Taste and stir in maple syrup if you want more sweetness, the cherries add plenty on their own.
  7. Let the porridge rest off heat for 2 to 3 minutes, it thickens noticeably as it sits.
  8. Divide between bowls and top with sliced almonds and a few extra cherries. Serve warm.

Notes

  • Use old-fashioned rolled oats, not instant, for a creamier texture.
  • Pit cherries before halving, a cherry pitter makes this fast.
  • Don't skip the black pepper, it activates the turmeric.
  • Let porridge rest 2 to 3 minutes off heat before serving.
