Porridge
- Combine the oats, almond milk, chia seeds, cinnamon, turmeric, black pepper, and salt in a 2-quart / 1.9L saucepan over medium heat.
- Bring to a gentle simmer, stirring often so the oats don't stick to the bottom of the pan.
- Reduce heat to low and simmer for 8 to 10 minutes, stirring every minute or so, until the oats turn creamy and thick.
- Add the cherries and simmer for 3 to 5 more minutes, until they soften and release their juice into the porridge.
- Remove from heat and stir in the almond butter and vanilla extract until fully melted through.
- Taste and stir in maple syrup if you want more sweetness, the cherries add plenty on their own.
- Let the porridge rest off heat for 2 to 3 minutes, it thickens noticeably as it sits.
- Divide between bowls and top with sliced almonds and a few extra cherries. Serve warm.
Notes
- Use old-fashioned rolled oats, not instant, for a creamier texture.
- Pit cherries before halving, a cherry pitter makes this fast.
- Don't skip the black pepper, it activates the turmeric.
- Let porridge rest 2 to 3 minutes off heat before serving.
