Ingredients
  

For the cauliflower bites
  • 1 large head cauliflower cut into bite-size florets
  • ¾ cup all-purpose flour
  • ¾ cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
For the buffalo sauce
  • ½ cup buffalo sauce
  • 1 tablespoon melted butter or olive oil

Method
 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix flour, water, garlic powder, smoked paprika, salt, and black pepper. Stir until smooth.
  3. Add cauliflower florets to the batter. Toss until fully coated.
  4. Spread the coated cauliflower on the baking sheet in a single layer. Leave space between pieces.
  5. Bake for 22–25 minutes. Flip halfway through so both sides crisp up.
  6. In a small bowl, mix buffalo sauce with melted butter or olive oil.
  7. Remove cauliflower from the oven. Gently toss with the buffalo sauce.
  8. Return to the oven and bake for another 10–12 minutes until sticky and lightly crispy.
  9. Remove from the oven and let rest for 2 minutes before serving.

Notes

  • Do not crowd the baking sheet. Crowding makes the cauliflower soft instead of crispy.
  • Always add the buffalo sauce after the first bake. This keeps the coating firm.
  • These taste best fresh. If reheating, use an oven or air fryer, not a microwave.
  • For less heat, mix a little ranch into the buffalo sauce before tossing.
