Ingredients
  

  • 2 lbs turkey breast or turkey tenderloins
  • 3 cloves garlic minced
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme or 1 tbsp fresh chopped thyme
  • 1 tsp dried rosemary or 1 tbsp fresh chopped rosemary
Optional: splash of white wine or chicken broth for extra moisture

Method
 

  1. Marinate the turkey: In a bowl, mix garlic, lemon juice, lemon zest, olive oil, salt, pepper, paprika, and herbs. Rub evenly over the turkey. Cover and refrigerate for at least 1 hour (overnight is best).
  2. Preheat oven: Set to 375°F (190°C).
  3. Prepare the turkey: Place the turkey on a roasting rack or in a baking dish. Pour any leftover marinade over the top.
  4. Roast the turkey: Cook until the internal temperature reaches 165°F (74°C). A 2 lb turkey breast usually takes 50–60 minutes. Baste once or twice with pan juices.
  5. Rest the turkey: Let it rest 10–15 minutes before slicing.
  6. Serve: Slice and enjoy with roasted vegetables, salad, or potatoes.
