Smoked Trout Potato Salad Bowl with Dill and Lemon

Ingredients
  

Salad
  • 700 g baby potatoes halved if larger than a golf ball
  • 4 eggs large
  • 250 g smoked trout fillets hot-smoked, skin and pin bones removed, flaked
  • 2 stalks celery thinly sliced
  • 1/4 cup red onion thinly sliced
  • 2 tbsp capers drained
  • 3 tbsp fresh dill chopped, plus extra for serving
  • 3 cups baby arugula for serving
Lemon-Dill Dressing
  • 3 tbsp mayonnaise
  • 2 tbsp plain Greek yogurt
  • 1 tbsp Dijon mustard
  • 2 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 1 tbsp olive oil
  • 1/2 tsp salt plus more for the potato water
  • 1/4 tsp black pepper freshly ground

Method
 

Cook the Potatoes and Eggs
  1. Place the potatoes in a 3-quart / 2.8 L saucepan, cover with cold water, and add a generous pinch of salt. Bring to a boil and cook for 12 to 15 minutes, until a knife slides in easily.
  2. Meanwhile, bring a 2-quart / 1.9 L saucepan of water to a boil. Lower in the eggs and cook for exactly 7 minutes for a jammy yolk that still holds together.
  3. Drain the eggs and drop them into an ice bath for 5 minutes. Peel and halve them once cool.
  4. Drain the potatoes in a colander and let them steam-dry for 2 to 3 minutes. Cut any larger pieces in half.
Make the Dressing and Assemble
  1. Whisk the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, lemon zest, olive oil, salt, and pepper together in a mixing bowl until smooth.
  2. Add the still-warm potatoes to the bowl and toss with two-thirds of the dressing so they absorb the flavor.
  3. Fold in the celery, red onion, capers, and chopped dill, mixing gently so the potatoes don't break apart.
  4. Check the flaked smoked trout for any missed pin bones, then fold it into the salad, or set it aside to layer on top.
  5. Divide the arugula between bowls, spoon the potato salad over the top, and add the egg halves and trout.
  6. Drizzle with the remaining dressing and scatter extra dill over each bowl before serving.

Notes

  • Choose hot-smoked, vacuum-packed trout labeled ready-to-eat, not cold-smoked lox-style fillets.
  • Pregnant or immunocompromised eaters should confirm smoked fish is fully cooked before serving.
  • Toss potatoes with dressing while warm, this is where most of the flavor gets absorbed.
  • Don't skip draining the potatoes well, extra water thins out the dressing fast.
