Soft and Chewy Sugar-Free Pistachio Rosewater Cookies

Tender gluten-free cookies made with almond flour, ground pistachios, and rosewater, sweetened with erythritol instead of sugar.

Ingredients
  

  • 115 g unsalted butter, softened
  • 100 g powdered erythritol
  • 1 egg yolk large
  • 1 rosewater to 1.5 tsp; culinary grade
  • 200 g almond flour finely ground, blanched
  • 60 g shelled pistachios, finely chopped
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp shelled pistachios, chopped for topping

Method
 

  1. Preheat the oven to 165 C / 330 F. Line a 33 x 46 cm / 13 x 18 inch sheet pan with parchment paper.
  2. In a mixing bowl, beat the softened butter and powdered erythritol with a hand mixer until light and fluffy, about 2 minutes.
  3. Add the egg yolk and rosewater. Beat again until fully combined and smooth.
  4. In a separate bowl, whisk the almond flour, chopped pistachios, baking powder, and salt together.
  5. Fold the dry ingredients into the wet mixture until a soft dough forms. It will feel slightly sticky at this stage.
  6. Chill the dough for 15 minutes if it's sticky enough to stick to your hands.
  7. Scoop the dough into 20 balls, about 25 g each, and space them 5 cm apart on the sheet pan.
  8. Flatten each ball gently with your palm since this dough barely spreads while baking.
  9. Press a few extra chopped pistachios into the top of each cookie.
  10. Bake for 12 to 14 minutes, until the edges turn light golden and the centers look set.
  11. Cool on the pan for 5 minutes, then transfer to a rack to cool completely before storing.

Notes

  • Use food-grade rosewater only, not perfume or cosmetic rosewater.
  • Dough spreads very little, so flatten balls before baking.
  • Cookies firm up as they cool, don't judge doneness while still warm.
  • Swap powdered erythritol 1:1 with a monk fruit blend if you prefer.
