Ingredients
  

For the Apples
  • 4 –5 medium Granny Smith apples peeled and sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon vanilla extract
For the Topping
  • ¾ cup old-fashioned oats
  • ½ cup almond flour or all-purpose flour
  • ¼ cup unsweetened shredded coconut optional
  • cup cold butter cut into small cubes
  • Pinch of salt

Method
 

Prep the apples
  1. Place the sliced apples in a bowl. Add the lemon juice, cinnamon, nutmeg, and vanilla. Mix everything gently so the slices get coated. Let them sit for about 5 minutes.
Make the topping
  1. In another bowl, mix the oats, almond flour, shredded coconut, and salt. Add the cold butter. Use your fingers or a pastry cutter to break the butter into the mixture until you get small crumbly pieces.
Build the crisp
  1. Spread the apples evenly in a baking dish. Sprinkle the topping over the apples. Don’t press it down. You want loose crumbs so they crisp up well.
Bake
  1. Bake at 350°F (175°C) for 35–40 minutes. The topping should turn golden and the apples should be soft. Let it rest for about 10 minutes before serving.

Notes

  • If your apples are very tart, add a tiny drizzle of honey, but only if you feel it needs it.
  • Letting the crisp cool a little helps the topping stay crunchy.
  • Use fresh apples for the best texture. Older apples get mushy fast.
  • Reheat leftovers in the oven so the top stays crisp instead of soft.
