Ingredients
  

  • 2 cups frozen blueberries
  • cups plain full-fat Greek yogurt
  • 2 –3 tablespoons honey or sugar-free sweetener monk fruit, stevia, or allulose
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon lemon juice
  • Pinch of salt
Optional: a few mint leaves or lemon zest for garnish

Method
 

Step 1: Blend the base
  1. Add frozen blueberries, Greek yogurt, sweetener, vanilla extract, lemon juice, and salt to a blender or food processor. Blend until smooth and creamy, stopping to scrape down the sides if needed.
Step 2: Taste and adjust
  1. Give it a quick taste. If you prefer it sweeter, add a little more sweetener and blend again for a few seconds.
Step 3: Freeze
  1. Pour the mixture into a freezer-safe container. Smooth out the top, then press a piece of plastic wrap directly on the surface to prevent ice crystals. Freeze for about 2–3 hours, or until firm but scoopable.
Step 4: Serve and enjoy
  1. Let it sit at room temperature for 5 minutes if it’s too firm. Scoop into bowls or cones and garnish with fresh blueberries or mint leaves. Serve right away for the creamiest texture.

Notes

  • Use full-fat Greek yogurt for the creamiest texture. Low-fat yogurt tends to make the dessert icy.
  • Lemon juice gives brightness and makes the blueberry flavor stronger—don’t skip it.
  • You can swap blueberries for strawberries, raspberries, or peaches if you want a new twist.
