Ingredients
  

  • 1 cup natural peanut butter smooth or crunchy
  • 1/4 cup unsalted butter
  • 1/4 cup cream cheese optional for extra creaminess
  • 1/2 cup powdered sugar substitute erythritol or monk fruit
  • 1 tsp vanilla extract
Optional: 2 tbsp unsweetened cocoa powder or sugar-free chocolate chips for chocolate swirl

Method
 

  1. Prepare the pan: Line a small square baking dish with parchment paper. This makes it easy to remove the fudge later.
  2. Melt the base: In a medium saucepan over low heat, combine butter, peanut butter, and cream cheese. Stir constantly until smooth.
  3. Add sweetener: Remove from heat. Mix in powdered sugar substitute and vanilla extract. Taste and adjust sweetness as needed.
  4. Optional chocolate swirl: Fold in cocoa powder or chocolate chips gently if desired.
  5. Chill: Pour mixture into prepared pan. Smooth the top with a spatula. Refrigerate for at least 2 hours until firm.
  6. Cut and serve: Lift fudge from pan using parchment paper. Cut into squares and enjoy. Store leftovers in an airtight container in the fridge.

Notes

 
  • For a firmer fudge, chill longer or slightly reduce cream cheese.
  • Can add a sprinkle of sea salt on top for flavor contrast.
