Sugar-Free Vanilla Berry Mug Cake

A soft sugar-free vanilla cake made in a mug in under 5 minutes, naturally sweetened with berries and a touch of monk fruit sweetener.

Ingredients
  

  • 4 tbsp blanched almond flour approx. 28 g
  • 1 tbsp monk fruit granulated sweetener or erythritol blend
  • 1/4 tsp baking powder
  • 1/2 tsp pure vanilla extract
  • 1 medium egg
  • 2 tbsp unsweetened almond milk or any unsweetened milk
  • 3 tbsp mixed berries fresh or frozen, blueberries, raspberries, or strawberries
  • 1 pinch pinch of salt

Method
 

  1. Add the almond flour, monk fruit sweetener, baking powder, and salt to a 12-oz microwave-safe mug. Stir with a fork until combined and no lumps remain.
  2. Crack the egg into the mug, add the almond milk and vanilla extract. Mix with the fork until a smooth batter forms, about 30 seconds.
  3. Press the berries gently into the top of the batter, distributing them evenly. Leave a small border of batter visible around the edges.
  4. Microwave on full power for 60 seconds. Check the center. If it still looks wet and liquid, microwave in 15-second bursts until the edges are set and the center looks just barely done.
  5. Let the mug rest on the counter for 60 seconds before eating. The center will finish setting during this time. Eat directly from the mug.

Notes

Microwave wattages vary widely. If your microwave runs above 1000W, start checking at 50 seconds to avoid overcooking.
