If using fresh corn, stand each ear upright in a bowl and slice the kernels off with a chef's knife, about 2 cups total. If using frozen corn, thaw completely and pat dry with a towel.
In a large bowl, whisk the cornmeal, almond flour, baking powder, salt, and pepper.
In a small bowl, whisk the eggs and milk. Pour into the dry ingredients and stir until just combined.
Fold in the corn kernels, green onions, and cheddar cheese. Let the batter rest for 5 minutes so the cornmeal can absorb moisture.
Heat 1 tbsp oil in a 12-inch nonstick skillet over medium heat.
Scoop 1/4 cup batter per fritter into the skillet, cooking 4 at a time so they have room to crisp. Cook 3 to 4 minutes per side, until deep golden brown and the center no longer looks wet.
Transfer cooked fritters to a paper towel-lined plate. Add another tbsp oil to the skillet and repeat with the remaining batter in 2 more batches, about 12 fritters total.
Serve warm with toppings of your choice.
