Ingredients
  

  • 1 cup medjool dates pitted
  • ½ cup tahini smooth or crunchy
  • 1 cup rolled oats gluten-free optional
  • ¼ cup chia seeds or flax seeds
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
Optional: 2 tablespoons cacao nibs or mini dark chocolate chips
Substitutions / Notes:
  • For Paleo: replace oats with almond flour or shredded coconut.
  • For a chocolate twist: add cocoa powder or chocolate chips.

Method
 

  1. Prep the dates: Soak medjool dates in warm water for 10 minutes if they are dry. Drain thoroughly.
  2. Blend base: In a food processor, pulse dates until they form a sticky paste.
  3. Add other ingredients: Add tahini, oats, chia seeds, vanilla, and salt. Pulse until clumping.
  4. Optional add-ins: Add cacao nibs or chocolate chips and pulse lightly to combine.
  5. Form balls: Roll tablespoon-sized portions into tight balls using your hands. Lightly dampen hands if sticky.
  6. Chill: Refrigerate for 30 minutes before serving. For longer storage, freeze in an airtight container.
