Ingredients

For the bowl
  • 120 ml unsweetened almond milk (1/2 cup)
  • 1 ripe avocado medium (about 150 g flesh); halved and pitted
  • 2 frozen bananas medium (about 240 g); sliced into coins before freezing
  • 30 g baby spinach (1 big handful)
  • 2 tbsp ground flaxseed (14 g)
  • 1 tbsp maple syrup
  • 2 tsp lime juice
  • 1/2 tsp vanilla extract
  • 1 pinch fine salt
Toppings
  • 100 g fresh blueberries (3/4 cup)
  • 30 g granola (about 1/3 cup)
  • 1 tbsp pumpkin seeds (10 g)
  • 1 tbsp unsweetened shredded coconut

Method

  1. Pour the almond milk into a 1.5 L / 50 oz high-speed blender. Scoop the avocado flesh into the jar, then add the frozen banana, spinach, ground flaxseed, maple syrup, lime juice, vanilla, and salt.
  2. Blend on low for 15 seconds, then switch to high for 60 to 90 seconds. Stop once or twice to scrape down the sides. The base is ready when it's smooth and holds a ridge when you drag a spoon through it. If it looks soupy, you added too much liquid, so blend in another 60 g of frozen banana.
  3. Divide the mixture between two 500 ml / 16 oz bowls and smooth the tops with the back of a spoon.
  4. Scatter the blueberries, granola, pumpkin seeds, and coconut evenly over both bowls. Eat within 10 minutes while the base is thick and the granola is still crunchy.

Notes

  • Freeze banana slices for at least 4 hours so the base blends to a soft-serve texture.
  • Scrape down the sides once or twice so no chunks of avocado hide near the lid.
  • Eat within 10 minutes of blending while the granola is still crunchy.
  • Rinse the blender right away, because flax turns gluey as it dries.
