Ingredients
  

  • 3 medium zucchinis
  • 1 bell pepper chopped
  • 1 cup cherry tomatoes halved
  • 2 cloves garlic minced
  • 1 small onion diced
  • 2 tbsp fresh basil chopped
  • 2 tbsp fresh parsley chopped
  • 2 tbsp olive oil
  • ½ cup shredded cheese optional
  • ½ cup Ricotta optional
  • ¼ cup breadcrumbs optional

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Slice and scoop out zucchinis to create boats.
  3. Sauté bell pepper, garlic, onion, and tomatoes in olive oil. Mix in herbs, breadcrumbs, and cheese (if using).
  4. Stuff zucchini boats with veggie mixture and place on a baking sheet.
  5. Bake for 20-25 minutes.
  6. Optional: Broil for 2-3 minutes for a crispy top.
