Method
- Cut watermelon into bite-sized cubes and place them in a large salad bowl.
- Crumble feta cheese over the watermelon.
- Add torn fresh mint leaves.
- Mix in cucumber and red onion if using.
- Drizzle with olive oil and squeeze fresh lime juice over the salad.
- Season with black pepper. Taste before adding salt since feta is salty.
- Toss gently, chill for 15–20 minutes, and serve cold.
Notes
- Tear mint leaves instead of chopping to keep their flavor fresh.
- Serve right after making; the watermelon will release water if it sits too long.
- For a twist, drizzle balsamic glaze or toss in arugula or avocado.
