Ingredients
  

  • 6 cups cubed seedless watermelon about 1 medium watermelon
  • 1 cup feta cheese crumbled (preferably block feta)
  • ½ cup fresh mint leaves torn
1 small cucumber, diced (optional)
¼ red onion, thinly sliced (optional)
  • 2 tbsp olive oil
  • Juice of 1 lime or lemon
  • Freshly ground black pepper to taste
  • Small pinch of salt if needed

Method
 

  1. Cut watermelon into bite-sized cubes and place them in a large salad bowl.
  2. Crumble feta cheese over the watermelon.
  3. Add torn fresh mint leaves.
  4. Mix in cucumber and red onion if using.
  5. Drizzle with olive oil and squeeze fresh lime juice over the salad.
  6. Season with black pepper. Taste before adding salt since feta is salty.
  7. Toss gently, chill for 15–20 minutes, and serve cold.

Notes

  • Tear mint leaves instead of chopping to keep their flavor fresh.
  • Serve right after making; the watermelon will release water if it sits too long.
  • For a twist, drizzle balsamic glaze or toss in arugula or avocado.
