Watermelon Mint Electrolyte Smoothie

A 5-minute blended drink made with frozen watermelon, coconut water, and fresh mint for natural post-workout or hot-day rehydration.

Ingredients
  

  • 3 cups (about 450 g) frozen watermelon cubes seedless, cubed and frozen at least 4 hours
  • 1 cup (240 ml) coconut water plain, unsweetened
  • 12 to 15 leaves fresh mint leaves spearmint preferred
  • 2 tbsp fresh lime juice about 1 medium lime
  • 1/8 tsp sea salt
  • 1 tsp honey or agave optional, only if watermelon is not sweet

Method
 

  1. Add coconut water and mint leaves to the blender. Blend on high for 10 seconds until the mint is fully broken down and the liquid looks light green.
  2. Add the frozen watermelon cubes, lime juice, and sea salt to the blender.
  3. Blend on high for 30 to 45 seconds until the mixture is smooth and slushy with no visible chunks. If it's too thick to blend, add 2 tbsp of coconut water and pulse again.
  4. Taste and add honey or agave only if the watermelon is not sweet enough. Blend for 5 more seconds to combine.
  5. Pour immediately into two tall chilled glasses. Garnish with a fresh mint sprig and a lime wheel if serving to guests. Drink right away.

Notes

For the coldest result, chill your glasses in the freezer for 10 minutes before pouring. The smoothie holds its slushy texture noticeably longer in a pre-chilled glass.
