Ingredients

  • 2 tsp wheatgrass powder (6 g)
  • 1 frozen banana large (about 120 g); peeled, sliced before freezing
  • 150 g frozen pineapple chunks (1 cup)
  • 2 fresh ginger cm / 3/4 inch piece (about 10 g); peeled and thinly sliced
  • 1 lemon large; zested (1 tsp), then juiced (about 45 ml)
  • 240 ml unsweetened coconut water (1 cup); cold
  • 1 tbsp maple syrup (20 g); optional

Method

  1. Peel the ginger with the edge of a spoon and slice it thin. Zest the lemon until you have 1 tsp, then juice it to get about 45 ml.
  2. Pour the coconut water into a 1.5 L / 50 oz blender jar. Add the wheatgrass powder, maple syrup, ginger, lemon juice and zest, then top with the frozen banana and pineapple.
  3. Blend on low for 15 seconds, then on high for 45 to 60 seconds, until no ginger flecks are visible and the smoothie is as thick as soft-serve but still pours. Scrape down the sides once if the fruit sticks.
  4. Taste and add a small squeeze more lemon if it's flat. Pour into two 350 ml / 12 oz glasses and drink within 15 minutes.

Notes

  • Use 2 tsp powder for 2 servings. More than that turns grassy fast.
  • Freeze banana slices ahead so the smoothie turns out thick without ice.
  • Add liquid to the blender first, then powder, then the frozen fruit.
  • Drink within 15 minutes for the best texture and color.
