Seared Buffalo Chicken Wraps with Greek Yogurt Ranch

Jump to Recipe

I make this wrap on weeks when I’ve said yes to too many things and lunch needs to happen fast. Seared chicken, buffalo sauce, a cool yogurt ranch. That’s the whole idea.

The protein count comes from real places, not powder. Chicken breast, Greek yogurt, a high-protein tortilla. Nothing weird, nothing you need to explain to your kids.

I use Frank’s RedHot for the buffalo sauce because it’s not too thick and doesn’t drown the chicken. If your sauce is thinner, cut back on the milk in the ranch so the wrap doesn’t turn soggy by the time you finish rolling it.

This sits right in the weekday lunch rotation. Ten minutes of hands-on cooking, a few minutes of assembly, and you’re eating before you’ve even sat down properly.

Why You’ll Love This Recipe

  • Packs about 36 grams of protein into one wrap
  • Ready in 32 minutes with real, simple ingredients
  • Chicken and ranch both meal-prep ahead easily
  • Kid-friendly heat level if you go light on buffalo sauce

Ingredient Notes

  • Chicken breast: Pound to an even 2 cm thickness so it sears evenly. Chicken thighs work too, add 2 to 3 minutes more cook time.
  • Buffalo sauce: I use Frank’s RedHot Buffalo Wing Sauce. A milder cayenne hot sauce works if you want less heat.
  • High-protein tortilla: Brands like Mission Carb Balance or La Banderita high-protein add 8 to 9 grams of protein each without changing the taste much.
  • Greek yogurt: Full-fat or 2% both work fine here. Nonfat gets a bit chalky once mixed with the ranch seasoning.
  • Ranch seasoning: A store-bought packet works, or mix 1 tsp dried dill, 1/2 tsp garlic powder, and 1/2 tsp onion powder.

Ingredients

Buffalo Chicken
  • 450 g boneless skinless chicken breast (2 breasts); pounded to 2 cm thickness
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 80 ml buffalo sauce / 1/3 cup; divided, Frank’s RedHot or similar
Greek Yogurt Ranch
  • 120 g plain Greek yogurt / 1/2 cup; full-fat or 2%
  • 1 tbsp ranch seasoning mix or homemade blend, see notes
  • 2 tbsp milk to thin the ranch
Assembly
  • 4 high-protein tortillas large (10-inch)
  • 2 cups romaine lettuce shredded and patted dry
  • 60 g shredded cheddar cheese / 1/2 cup; optional
  • 1/2 cup celery thinly sliced, optional

Method

Cook the Chicken
  1. Pound the chicken breasts to an even 2 cm thickness between two sheets of plastic wrap. Pat dry, then season both sides with garlic powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a 12-inch nonstick skillet over medium-high heat until shimmering.
  3. Sear the chicken 5 to 6 minutes per side, without moving it, until golden brown and an instant-read thermometer reads 165 F / 74 C at the thickest part.
  4. Transfer the chicken to a cutting board and rest for 5 minutes. Slice into thin strips.
  5. Toss the sliced chicken with 1/4 cup of the buffalo sauce in a mixing bowl, off the heat, until evenly coated and glossy.
Make the Ranch
  1. Whisk the Greek yogurt, ranch seasoning, and milk together in a small bowl until smooth and pourable. Taste and add a pinch more seasoning if needed.
Assemble the Wraps
  1. Warm each tortilla in the dry skillet for about 15 seconds per side, until pliable.
  2. Spread 2 tablespoons of yogurt ranch down the center of each tortilla, leaving a 2 cm border.
  3. Layer the shredded lettuce, buffalo chicken, cheddar, and celery on top of the ranch.
  4. Drizzle the remaining buffalo sauce over the filling. Fold in the sides and roll the tortilla tightly into a wrap.
  5. Slice each wrap in half on a diagonal and serve right away.

Notes

  • Pound chicken to an even 2 cm thickness for even cooking
  • Rest chicken 5 minutes before slicing to keep it juicy
  • Toss chicken in buffalo sauce off the heat, not in the pan
  • Store components separately if meal prepping for the week
  • Pat shredded lettuce dry so wraps don’t turn soggy

Tips for Success

  • Pound the chicken to an even thickness so both pieces finish cooking at the same time.
  • Rest the seared chicken 5 minutes before slicing so the juices stay in the meat, not on the board.
  • Warm the tortillas 15 seconds per side in a dry skillet so they fold without cracking.
  • Toss the chicken in buffalo sauce off the heat so the sauce stays glossy instead of breaking.
  • Shred the lettuce fine and pat it dry so the wrap doesn’t turn soggy by lunchtime.

Variations

  • Swap the tortilla for a large lettuce leaf or low-carb collard wrap to cut carbs further.
  • Add crumbled blue cheese instead of cheddar for a sharper, more classic buffalo wing flavor.
  • Use rotisserie chicken shredded and warmed in the buffalo sauce when you’re short on time.

Storage and Reheating

The chicken and ranch both keep well on their own for 3 to 4 days in the fridge in separate airtight containers. I don’t recommend storing the wrap fully assembled, the lettuce wilts and the tortilla gets soft within a few hours.

For meal prep, store the sliced buffalo chicken, the yogurt ranch, and the shredded lettuce separately, then build the protein-packed wrap fresh when you’re ready to eat.

To reheat just the chicken, microwave it in 30-second bursts until warm, or toss it in a skillet over medium heat for 2 to 3 minutes. Add the ranch and cold lettuce after reheating so nothing gets soggy.

Serving Suggestions

Cut the high-protein wrap in half on a diagonal so the layers show, that’s half the appeal on a plate. Serve it with a small pile of baby carrots and celery sticks and extra ranch for dipping.

A handful of kettle chips or a light cucumber salad on the side rounds it out without much extra work.

For a heartier lunch, pair it with a cup of tomato soup, the acidity cuts through the richness of the buffalo sauce well.

FAQ

Why does my buffalo chicken wrap turn soggy after a couple hours?

It’s usually the lettuce or the ranch sitting against the warm tortilla too long. Shred the lettuce and pat it dry before adding it, and keep the ranch and lettuce separate from the tortilla until you’re ready to eat. For meal prep, store the components apart and assemble right before lunch.

Can I use chicken thighs instead of chicken breast in this wrap?

Yes, boneless skinless thighs work well and stay juicier than breast if you overcook them slightly. Sear them 2 to 3 minutes longer per side since they’re a bit thicker, and check they’ve reached 165 F / 74 C before slicing. The buffalo sauce covers up the richer flavor nicely.

Can I meal prep buffalo chicken wraps for the week?

Yes, but store the sliced chicken, ranch, and lettuce in separate containers rather than assembling the wraps ahead. They’ll keep 3 to 4 days in the fridge this way. Build the wrap fresh each time so the tortilla stays soft and the lettuce stays crisp.

What goes well with a buffalo chicken wrap besides chips?

Celery and carrot sticks with extra ranch on the side keep the classic buffalo wing pairing going. A light cucumber salad or a cup of tomato soup also works if you want something with more substance. Both cut through the richness of the buffalo sauce well.

Is this high-protein buffalo chicken wrap gluten free?

Not as written, since regular flour tortillas contain gluten. Swap in a certified gluten-free tortilla or use a large lettuce leaf instead, and double check your buffalo sauce and ranch seasoning packet for gluten-containing additives, most major brands like Frank’s RedHot are gluten free.

How do I know when the seared chicken is done for the wrap?

Check with an instant-read thermometer, the chicken is done at 165 F / 74 C at the thickest part. Visually, the outside should be golden brown with no pink showing when you slice into the center. Undercooked chicken looks slightly translucent and glossy inside instead of opaque.
