Crispy Garlic Thyme Roasted Chicken Legs with Lemon

Jump to Recipe

Garlic and thyme roasted chicken legs are bone-in, skin-on legs roasted at 220 C / 425 F for 40 to 45 minutes, with garlic butter under the skin and thyme on the pan. The skin turns crisp. The meat stays juicy.

I used to rub minced garlic all over the skin and call it done. It burned every time, bitter and black by minute 30. So now the garlic goes under the skin, mixed into butter, where it melts instead of scorching.

The rest is simple. Pat the legs dry. Salt them. Roast until the thigh reads 175 F / 80 C.

One pan, about 15 minutes of prep, and leftovers that reheat well in the oven.

Why You’ll Love This Recipe

  • Garlic butter under the skin seasons the meat itself
  • One sheet pan, 15 minutes of prep, no flipping
  • Skin turns crisp without frying or fussing
  • Leftovers reheat in the oven and stay juicy

Ingredient Notes

  • chicken legs: Buy bone-in, skin-on legs of similar size so they finish together. Bone-in thighs alone also work, but check them 5 to 10 minutes earlier.
  • garlic: Grate four cloves into the butter and keep six whole in their skins on the pan. The skins protect those cloves from scorching.
  • fresh thyme: Fresh gives the best flavor. Use 1 tsp dried in place of 1 tbsp fresh leaves in the butter, and skip the sprigs on the pan.
  • unsalted butter: Unsalted lets you control the salt. Olive oil is the dairy-free swap, 3 tbsp for 3 tbsp.
  • smoked paprika: It adds color and a faint smoke. Sweet paprika works if that’s what’s in your cupboard.

Ingredients

For the chicken
  • 4 bone-in, skin-on chicken legs (about 350 g / 12 oz each); thigh and drumstick attached
  • 1 tbsp olive oil (15 ml); for rubbing on the skin
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper freshly ground
  • 1 tsp smoked paprika
  • 6 garlic cloves whole, unpeeled, lightly smashed
  • 6 fresh thyme sprigs
  • 1 lemon halved
For the garlic thyme butter
  • 3 tbsp unsalted butter (42 g); softened
  • 4 garlic cloves finely grated
  • 1 tbsp fresh thyme leaves finely chopped
  • 1/4 tsp kosher salt

Method

  1. Heat the oven to 220 C / 425 F with a rack in the center. Pat the chicken legs very dry with paper towels, including around the bone and under any loose skin.
  2. Mix the softened butter, grated garlic, chopped thyme leaves, and 1/4 tsp salt in a small bowl until it forms a smooth paste.
  3. Loosen the skin on each leg by sliding two fingers between skin and meat, starting at the thick end of the thigh and working toward the drumstick. Spoon roughly 2 tsp of the garlic butter into each pocket and press the skin back down to spread it. Keep the garlic off the outside of the skin, where it would burn.
  4. Rub the skin of each leg with the olive oil, then season all over with 1 1/2 tsp salt, the pepper, and the paprika. Scatter the smashed garlic cloves and thyme sprigs on a 33 x 46 cm / 13 x 18 inch sheet pan and set the legs skin side up between them, at least 2 cm / 1 inch apart.
  5. Roast for 40 to 45 minutes without flipping, until the skin is deep golden and an instant-read thermometer reads 175 F / 80 C in the thickest part of the thigh, not touching the bone.
  6. Move the legs to a plate and rest for 10 minutes. Squeeze the lemon halves over the chicken, then spoon the pan juices over the top and serve with the soft roasted garlic cloves.

Notes

  • Keep the legs skin side up the whole time. No flipping needed.
  • Never rub minced garlic on the outside of the skin, it burns at 220 C / 425 F.
  • Squeeze the roasted garlic cloves from their skins and spread them on the chicken or bread.
  • Spoon the pan juices over the legs after resting for a quick sauce.

Tips for Success

  • Pat the legs completely dry with paper towels before seasoning, because surface moisture steams the skin instead of crisping it.
  • Loosen the skin with two fingers, working from the thick end of the thigh toward the drumstick, and take care not to tear it.
  • Space the legs at least 2 cm / 1 inch apart on the sheet pan so hot air reaches the skin on all sides.
  • Check the temperature in the thickest part of the thigh, away from the bone, and pull the legs at 175 F / 80 C.
  • Rest the legs for 10 minutes before serving so the juices settle back into the meat instead of running onto the pan.

Variations

  • Swap the thyme for chopped rosemary and add 1 tsp lemon zest to the garlic butter for a sharper, piney finish.
  • Use 3 tbsp olive oil instead of butter under the skin to make it dairy free. The paste is looser, so press it flat.
  • Roast 500 g / 1 lb halved baby potatoes on a second sheet pan on the lower rack at the same temperature, turning once.

Storage and Reheating

Garlic and thyme roasted chicken legs keep for 3 to 4 days in an airtight container in the fridge. Refrigerate them within 2 hours of cooking.

To reheat, set the legs on a sheet pan in a 200 C / 400 F oven for 12 to 15 minutes, until hot through and the skin crackles again. The microwave works at 70 percent power for 2 to 3 minutes, but the skin goes soft.

Freezing works well. Wrap each leg individually and freeze for up to 3 months, thaw overnight in the fridge, then reheat in the oven for about 20 minutes.

Serving Suggestions

Garlic and thyme roasted chicken legs pair best with starches that soak up the pan juices, like mashed potatoes, buttered rice, or crusty bread.

For a lighter plate, add roasted green beans or a green salad dressed with lemon and olive oil. Squeeze the soft roasted garlic cloves out of their skins and spread them on the chicken or the bread.

Kids tend to go for the drumstick end because it works as a handle. For toddlers, pull the meat off the bone and cut it small.

FAQ

How do I know when garlic and thyme roasted chicken legs are done?

They’re done when an instant-read thermometer reads 175 F / 80 C in the thickest part of the thigh, not touching the bone. The skin should be deep golden and the juices should run clear. Dark meat at that temperature is tender, while legs pulled earlier can feel rubbery near the bone.

Can I use dried thyme instead of fresh thyme on roasted chicken legs?

Yes, use 1 tsp dried thyme in place of the 1 tbsp fresh leaves in the garlic butter. Skip the sprigs on the pan if you only have dried, since loose dried thyme scorches at 220 C / 425 F. The flavor is a little more muted but still clearly thyme.

Can I put the garlic butter under the skin the night before?

Yes. Spoon the garlic butter under the skin up to 24 hours ahead, then cover the legs and refrigerate them on a plate. Pat the skin dry again before oiling and salting, and add about 5 minutes to the roast since they start cold.

What goes well with garlic and thyme roasted chicken legs?

Mashed potatoes, buttered rice, and crusty bread all work, because the garlic-thyme butter pools under the legs and you’ll want something to soak it up. Roasted green beans or a lemon-dressed green salad cut through the richness if you want a lighter plate.

Are garlic and thyme roasted chicken legs gluten free, and can I make them dairy free?

Yes to both. The recipe has no flour, breading, or soy sauce, so it’s naturally gluten free. For dairy free, replace the 3 tbsp butter with 3 tbsp olive oil. The paste is looser, so spoon it under the skin and press it flat rather than spreading.

What’s the difference between chicken legs and drumsticks in this recipe?

Chicken legs are the thigh and drumstick still joined, about 350 g each, and need 40 to 45 minutes here. Drumsticks alone are around 120 g and cook in 35 to 40 minutes at the same temperature. Check for 175 F / 80 C near the thickest part, whichever cut you use.
