Cherry Cacao Energy Bites

Jump to Recipe

I’ll be honest, I made these the first time because I needed something to grab between meetings that wasn’t a granola bar from a wrapper.

They came together in about 15 minutes. No oven, one bowl, a food processor. That’s the whole situation.

The cacao gives them a deep, almost chocolatey flavor. The dried cherries add a slight tang that keeps things interesting. And the oats hold it all together without making them dense or dry.

They sit right in your rotation as a pre-workout snack, a school lunch addition, or just something to reach for at 3pm when everything starts to feel hard.

Why You’ll Love This Recipe

  • Ready in 15 minutes with zero baking required
  • Natural sweetness from dates and dried cherries only
  • High fiber and keeps you full between meals
  • Freezer-friendly and meal-prep ready all week

Ingredient Notes

  • Medjool dates: These are the binder, so don’t skip them or swap for regular dried dates without soaking first. If your Medjool dates feel dry, soak them in warm water for 10 minutes, then drain before using.
  • Dried tart cherries: Tart cherries give a sharper, fruitier contrast to the cacao. Dried sweet cherries work too, just expect a slightly sweeter bite. Avoid ones packed in syrup.
  • Rolled oats: Use old-fashioned rolled oats for the best texture. Quick oats make the bites a little mushy. For gluten-free, use certified gluten-free rolled oats.
  • Raw cacao powder: Raw cacao is less processed than Dutch-process cocoa and has a sharper, more bitter flavor. Cocoa powder is a fine substitute if that’s what you have.
  • Almond butter: This adds fat and helps the bites hold their shape. Peanut butter or cashew butter work equally well. For nut-free, use sunflower seed butter.
  • Chia seeds: They add a small fiber and omega-3 boost without changing the flavor. Flaxseed meal is a good swap if you don’t have chia on hand.

Cherry Cacao Energy Bites

Quick no-bake energy bites made with oats, Medjool dates, dried cherries, and cacao powder. Ready in 15 minutes, no oven needed.
Prep Time 15 minutes
Total Time 25 minutes
Servings: 18 bites
Calories: 95

Ingredients

  • 200 g (about 10 large) Medjool dates, pitted soaked 10 min if dry
  • 80 g dried tart cherries unsweetened preferred
  • 130 g (1.5 cups) old-fashioned rolled oats certified gluten-free if needed
  • 30 g (4 tbsp) raw cacao powder plus extra for rolling
  • 60 g (3 tbsp) almond butter smooth, no added sugar
  • 15 g (1 tbsp) chia seeds
  • 1 tsp vanilla extract
  • 1 pinch fine sea salt

Method

  1. Add the pitted Medjool dates to a food processor and pulse for 30 to 45 seconds until they form a thick, sticky paste.
  2. Add the dried cherries, rolled oats, cacao powder, almond butter, chia seeds, vanilla extract, and sea salt to the processor.
  3. Pulse in short bursts, 8 to 10 pulses, until the mixture comes together and holds when pressed between your fingers. It should look like a coarse, dark dough, not smooth.
  4. If the mixture feels too dry, add 1 teaspoon of water and pulse again. If it’s too wet and sticky to handle, refrigerate for 10 minutes.
  5. Line a baking sheet with parchment paper. Use a 1-tablespoon cookie scoop or your hands to portion the mixture into 18 equal pieces.
  6. Lightly wet your palms and roll each portion into a smooth ball.
  7. Optional: roll each ball in a small bowl of cacao powder until lightly coated for a drier finish.
  8. Place the finished bites on the prepared sheet and refrigerate for at least 10 minutes before eating to let them firm up.

Notes

If your food processor is small, process the dates alone first until smooth, then transfer to a bowl and mix in the remaining ingredients by hand.

Tips for Success

  • Pulse the dates first until they form a sticky paste before adding remaining ingredients.
  • Wet your palms lightly before rolling to prevent the mixture from sticking to your hands.
  • Chill the mixture for 10 minutes before rolling if it feels too soft to shape.
  • Roll finished bites in extra cacao powder or shredded coconut for a drier, less sticky exterior.
  • Taste the mixture before rolling and add a pinch of salt if the sweetness needs balancing.

Variations

  • Swap dried cherries for dried cranberries and add orange zest for a citrus-forward version.
  • Add 2 tablespoons of hemp seeds and reduce oats slightly for extra protein per bite.
  • Mix in 2 tablespoons of mini dark chocolate chips for extra richness and texture contrast.

Storage and Reheating

Store finished bites in an airtight container in the fridge for up to 10 days. Layer them with parchment paper if stacking to prevent sticking.

For longer storage, freeze them on a parchment-lined tray until firm, about 1 hour, then transfer to a freezer bag. They keep in the freezer for up to 3 months.

Eat them straight from the fridge or let them sit at room temperature for 5 minutes if you prefer a softer texture. No reheating needed.

Serving Suggestions

These work well as a mid-morning snack with a cup of black coffee or a flat white. The slight bitterness of the cacao pairs well with coffee’s roast notes.

For a post-workout option, serve two bites alongside a glass of cold milk or a simple blueberry oat smoothie. The combination covers carbs, fat, and protein without much planning.

You can also plate them as a small dessert option at the end of a light meal. Arrange them on a board with a few fresh cherries and a square of dark chocolate for a no-fuss finish.

FAQ

Why are my cherry cacao energy bites crumbling and not holding together?

This usually means the dates weren’t sticky enough or the mixture is too dry. Add one more date or a teaspoon of almond butter and pulse again until the mixture clumps when pressed between your fingers.

Can I use cocoa powder instead of raw cacao in these energy bites?

Yes, cocoa powder works as a direct substitute in the same amount. The flavor will be slightly milder and less bitter than raw cacao, but the texture stays the same.

How far ahead can I make cherry cacao energy bites for the week?

You can make a full batch on Sunday and they’ll stay fresh in the fridge through the following weekend, about 10 days. Roll and store them before adding any coating so the exterior stays clean.

What pairs well with cherry cacao energy bites for a balanced snack?

A small handful of walnuts or a drinkable yogurt rounds out the snack with extra protein. They also go well with fresh fruit like sliced apple or a few strawberries on the side.

Are cherry cacao energy bites gluten-free?

They can be, as long as you use certified gluten-free rolled oats. Standard rolled oats are often processed in facilities that handle wheat, so the certification matters if you’re avoiding gluten for health reasons.

How do I make these energy bites nut-free for a school lunchbox?

Replace the almond butter with sunflower seed butter in the same quantity. The flavor is a little earthier but it works well with the cacao and cherry combination.
